I had been meaning to try cauliflower rice for a long time. I know people who follow the Paleo Diet swear by it, so a few days ago I finally gave it a go.
The verdict? I like it. I took a head of organic cauliflower, chopped it up, and put it in the food processor (If the head of cauliflower is large, you may have to process it in two batches). I “pulsed” it until it resembled the texture of rice and it was done. NOTE – You may have to remove a few larger pieces that didn’t get processed as well…I just ate them right then and there (that took care of the problem!).
When dinner time rolled around I put the stir-fry I made for dinner over the raw cauliflower rice and it was surprisingly good. I made a big batch of the cauliflower rice, so the next day I sauteed it a bit before eating it and really enjoyed the results as well.
I am definitely going to keep a bit of the cauliflower rice in my fridge at all times so I can add it to my meals for an extra cruciferous punch. Simple. Pure. Healthy.
